Your own custom fields appear on records
Fields your organization added to ServiceNow or Salesforce now appear wherever a record is shown — the preview panel and record detail gain a Custom fields section — and Zoe reads them back when you ask about a record.
The preview panel shows the first ten with a Show all toggle; record detail lists them all. Only fields that have a value appear, and they are read-only at this stage.
Labels come from your own instance wherever they can be read, and fall back to a tidied version of the field name otherwise.
